Bright red tomatoes are recommended on days when your energy has been absorbed under the scorching sun, or on days when you can't get rid of your burning sensation due to ultraviolet rays. Lycopene, the red pigment in tomatoes, has strong anti-inflammatory properties, making tomatoes an essential vegetable for maintaining health during the summer.
The skin is rich in lycopene, so there's no need to bother with boiling it. Absorption rate increases when heated or eaten with oil.

Easy Japanese-style paella with tomatoes and canned mackerel
Tomatoes with high antioxidant power, canned mackerel rich in omega-3 fatty acids and protein, and clams full of minerals are all ingredients with strong umami flavor. Transform into a summer ally with just a rice cooker.

A)
1 pack of clams (shelled can also be used) 4 cherry tomatoes 1 piece of ginger/garlic 1 can of boiled mackerel (use with juice)
2 teaspoons each of soy sauce, sake, mirin, and consommé
Two pinches of salt Tomato juice (no salt added) 200ml
Water 120ml
2 cups of rice
All-purpose green onion as desired
Method 1: Scrub the clams and soak them in salt water for about an hour to remove the sand.
②Cut the cherry tomatoes in half, and chop the ginger and garlic.
③Put all the ingredients into a rice cooker and add tomato juice up to the 2 cup mark.
④ Once cooked, add chopped green onions to your liking.
Point
*It is convenient to use a 500ml plastic bottle for salt water when removing sand from clams!
Adding 2 capfuls of salt to 500ml of water will create a salt concentration that makes it easy to remove sand.
*You can also enjoy the flavor by sprinkling dried parsley instead of green onions.
*If using tubed ginger and garlic, use 1/2 teaspoon each. *We also recommend freezing leftover paella and frying it with eggs to make fried rice!

Summer vegetables are often colorful and fragrant, and tend to be high in antioxidants. Stir-fry with oil that increases absorption and combine with lemon, which contains citric acid and limonene, to soothe your tired mind and body.

2 cherry tomatoes 1/4 celery 1/2 eggplant 1/8 pumpkin 2 green peppers 2 okra
B)
Salt, black pepper, mirin (optional) 1 teaspoon lemon juice
50ml each of olive oil (enough to cover the entire area)
a pinch of basil
How to make ① Slice the celery, eggplant, and pumpkin into desired sizes, and cut the green pepper into thick strips.
② Stir-fry the summer vegetables from A with olive oil.
③ Mix the ingredients from B and pour it over the vegetables from ② in a container to marinate. Complete by cooling in the refrigerator.

*Any combination of summer vegetables is OK. Use leftover ingredients.
*Please adjust the amount of lemon juice according to your preference.
*You can also make bruschetta by slicing it thinly and putting it on toasted bread.
